Ulu (Breadfruit) Sourdough Stuffing

Ingredients:

Ulu (Breadfruit) Sourdough Stuffing

  • 1/2 loaf sourdough bread, cut into 1-inch cubes
  • 4 tablespoons olive oil, divided
  • 1 tablespoon garlic powder
  • Salt and pepper to taste
  • 6 tablespoons garlic-herb butter, divided
  • 1 large Maui onion, diced
  • 3 stalks celery, diced
  • 1 pound pork sausage
  • 8 ounces cremini mushrooms, sliced
  • 1/2 firm medium ulu, cut into 1-inch cubes
  • 4 tablespoons fresh Italian parsley, chopped
  • 2 tablespoons fresh sage, chopped
  • 5 sprigs fresh thyme, stems removed
  • 1 sprig fresh rosemary, stems removed and chopped
  • 1 bulb garlic, roasted
  • 1 cup low-sodium chicken broth
  • 3 eggs, beaten

Directions:

  1. Heat oven to 350°F.
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, toss bread with 3 tablespoons olive oil, garlic powder, and salt and pepper to taste.
  4. Place bread on baking sheet; bake for 30 minutes or until crispy.
  5. In a large pan on medium-low heat, melt half the garlic-herb butter, add onions and celery.
  6. Saute for 2-3 minutes.
  7. Add sausage, mushrooms, salt and pepper to taste.
  8. Saute until sausage is cooked through, about 5 minutes.
  9. Transfer to a large mixing bowl and set aside.
  10. Over medium-low heat, add ulu chunks to the pan that was used for the sausage.
  11. Fry ulu with remaining garlic-herb butter and 1 tablespoon olive oil.
  12. Cook until golden and edges are crispy.
  13. Add to sausage mixture, then add bread and herbs.
  14. Toss ingredients together and transfer to a large baking dish.
  15. Increase heat to 400°F.
  16. In a small bowl, mash garlic into a paste and add chicken broth.
  17. Stir and pour over stuffing mixture.
  18. Pour eggs over mixture and carefully toss to coat evenly.
  19. Cover dish with foil, bake for 25 minutes.
  20. Remove cover and bake for another 20 minutes until edges are crispy.
