Watercress and Pork Soup

Watercress and pork soup

Ingredients:

Watercress and Pork Soup

  • 1 tablespoon vegetable oil
  • 1 1/2 pounds ground pork
  • 3 (14.5-ounce) cans low-sodium chicken broth
  • 4 - 6 cups water
  • 2 teaspoons Hawaiian salt
  • 1 (2-ounce) package long rice, cut in half
  • 1 bunch watercress, washed and cut into 2” lengths

Directions:

  1. In a large pot, heat oil; add pork and brown.
  2. Add chicken broth and water and boil.
  3. Add Hawaiian salt, long rice, and watercress.
  4. Continue to boil until long rice and watercress are tender, about 5 minutes.
  5. Add more water and salt, if needed.

Serves 6.
