Turkey Chili

Ingredients:

Turkey Chili

  • 1 tablespoon olive oil
  • 2 tablespoons tomato paste
  • 1 medium onion, chopped
  • 5 cloves garlic, minced
  • 1/2 red bell pepper, chopped
  • 2 teaspoons chili powder
  • 2 teaspoons hot paprika
  • 1 teaspoon dried coriander
  • 1/4 teaspoon oregano
  • Dash of cinnamon
  • 1 pound leftover turkey, shredded
  • One (28-ounce) can diced tomatoes
  • One (12-ounce) can kidney beans, drained
  • 1/2 teaspoon chili paste or hot sauce
  • Salt and pepper to taste
  • Favorite shredded cheese
  • Sour cream
  • Fresh cilantro, stems removed

Directions:

  1. Heat 1 tablespoon olive oil in large pot over medium.
  2. Add tomato paste, onion, garlic and red pepper.
  3. Stir until softened.
  4. Add chili powder, paprika, coriander, oregano, and cinnamon.
  5. Stir until fragrant.
  6. Add turkey and cook until reheated.
  7. Add tomatoes, beans and hot sauce.
  8. Allow to simmer, uncovered for 25-30 minutes.
  9. Season with salt and pepper.
  10. Top with sour cream, shredded cheese and cilantro.

Serves 4.
