Tomato and Basil Spread

Ingredients:

Tomato and Basil Spread

  • 2 pints red grape tomatoes, quartered
  • 4 cloves garlic, finely minced
  • 16 fresh basil leaves, plus more as needed, chiffonade
  • 4 tablespoons extra virgin olive oil
  • Salt and freshly ground pepper to taste

Directions:

  1. Combine tomatoes, garlic, basil and olive oil in a large bowl.
  2. Season with salt and pepper and toss to combine.
  3. Cover and refrigerate until ready to serve.

Makes 4 cups.

Approximate Nutrient Analysis per 2 Tablespoon spread on 1 slice Italian bread with brushed olive oil (not including salt to taste):
