Tofu-Tuna-Tomato Salad

Ingredients:

Tofu-Tuna-Tomato Salad

  • 1 head red leaf lettuce, torn into bite size pieces
  • 1 block (20 oz) tofu, drained and cubed
  • 1 can (6 1/2 oz) water-packed tuna, drained and flaked
  • 1 large tomato, diced
  • 1 small Maui onion (sweet onion), chopped
  • 1/2 cup chopped green onions
  • 3 tablespoons soy sauce
  • 3 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1/4 teaspoon garlic powder

Directions:

  1. Place lettuce in a large bowl or platter.
  2. Top with tofu, tuna, tomato, and onions.
  3. Combine remaining ingredients and mix well; pour over salad just before serving.

Makes 6 to 8 servings
