Taro Croquettes

Ingredients:

Taro Croquettes

  • 1 small sweet Ewa onion, minced
  • 1 tablespoon unsalted butter
  • 2 cups cooked taro, mashed
  • 1 large fresh local egg
  • 2 tablespoons flour
  • 1/4 cup chopped Chinese parsley
  • Vegetable oil for frying
  • Salt and pepper to taste

Directions:

  1. In a small saute pan, cook onion in butter until translucent; let cool.
  2. In a large bowl, add onion, taro, egg, flour, and Chinese parsley.
  3. Mix thoroughly.
  4. Form mix into small patties.
  5. Heat oil in large frying pan and cook patties until golden brown.
  6. Season with salt and pepper.
  7. Drain on paper towel.
  8. Serve hot.

Makes 2 servings.
