Swiss Steak, Frankie D's-Style

Ingredients:

Swiss Steak, Frankie D's-Style

  • 2 lb chuck roast or steak, cut into thin bite-size slices
  • 1/2 green papaya, grated
  • 1/4 cup butter or margarine
  • 3 cloves garlic, minced
  • 1 teaspoon garlic salt
  • 1/8 teaspoon pepper
  • 2 bay leaves
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon cornstarch
  • 1 cup water
  • 1 can (29 oz) stewed tomatoes
  • 1 large onion, sliced
  • 1 bell pepper, sliced

Directions:

  1. Combine meat and papaya; marinate overnight in the refrigerator.
  2. In a large skillet, heat butter and brown meat mixture; add garlic, garlic salt, pepper, bay leaves, and Worcestershire sauce.
  3. Cover and simmer for a few minutes.
  4. Combine the cornstarch and water; add to meat mixture and cook until slightly thickened.
  5. Stir in the remaining ingredients; cover and simmer for 30 minutes.

Makes 6 to 8 servings.
