Sweet Pineapple-Ginger Slaw

Ingredients:

Sweet Pineapple-Ginger Slaw

  • 4 cups finely shredded cabbage
  • 2 medium whole green onions, diagonally sliced
  • 1 can (8 ounces) pineapple tidbits in own juice, drained
  • ½ cup chopped fresh mint leaves
  • ¼ cups chopped pickled ginger
  • 3 tablespoons fresh lime juice
  • 2 tablespoons pourable sugar substitute
  • 1 tablespoon canola oil
  • 4 cups finely shredded cabbage

  • 1 can (8 ounces) pineapple tidbits in own juice, drained
  • ½ cup chopped fresh mint leaves
  • ¼ cups chopped pickled ginger
  • 3 tablespoons fresh lime juice
  • 2 tablespoons pourable sugar substitute
  • 1 tablespoon canola oil

Directions:

  1. Combine all ingredients in a large bowl.
  2. Using two utensils, toss gently, yet thoroughly, until well blended.
  3. Cover with plastic wrap and refrigerate 30 minutes before serving.

Makes 6 servings.
