Sugar and Spice Pumpkin Seeds

Ingredients:

Sugar and Spice Pumpkin Seeds

  • 1 egg white
  • 1/4 cup natural cane sugar (or raw sugar)
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon fine grained sea salt or kosher salt
  • 1 cup fresh raw pumpkin seeds, rinsed and dried

Directions:

  1. Preheat electric oven to 375°F.
  2. Grease baking sheet with non stick cooking spray.
  3. In a medium-sized bowl whisk together the egg white, sugar, cayenne and salt.
  4. Add the pumpkin seeds and toss well.
  5. Drain off any excess egg white (using a strainer) and place seeds in a single layer across a baking sheet.
  6. Bake for about 12 minutes, stirring once halfway or until seeds are golden.
  7. Taste and season with more salt if needed.

Makes one cup.
