Strawberry-Banana Pudding

Ingredients:

Strawberry-Banana Pudding

  • 1-1/2 cups cubed low-fat firm tofu
  • 1-1/2 cups sliced strawberries
  • 1 banana, sliced
  • 1 teaspoon vanilla
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt (optional)
  • 2 tablespoons honey
  • 12 Grape Nuts crusts (optional)

Directions:

  1. In a blender or food processor, add tofu, strawberries, banana, vanilla, lemon juice, salt, and honey.
  2. Blend until smooth and creamy.
  3. Pour into individual serving dishes or into individual Grape Nuts crusts.
  4. Chill overnight.

Makes 6 (1/2 cup) or 12 (1/4 cup) servings.
