Skillet Macaroni and Cheese

Ingredients:

Skillet Macaroni and Cheese

  • 1/4 cup butter or margarine
  • 1 package (8 oz) macaroni
  • 1/2 cup chopped onions
  • 1/2 cup chopped green pepper (optional)
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon oregano
  • 1/4 teaspoon dry mustard
  • 2 cups water
  • 1 tablespoon flour
  • 1 can (13 oz) evaporated milk
  • 2 tablespoons chopped pimiento
  • 1/2 lb sharp cheddar cheese, shredded

Directions:

  1. Melt butter in electric skillet at 250°F.
  2. Add uncooked macaroni, onions, green pepper, salt, pepper, oregano, and dry mustard.
  3. Cook until onions are clear, stirring occasionally.
  4. Add water; bring to a boil on high heat.
  5. Lower heat to 200° F; cover and cook for 20 minutes.
  6. Sprinkle flour over macaroni mixture; blend well.
  7. Stir in evaporated milk, pimiento, and cheese.
  8. Cook 5 more minutes, stirring occasionally, until cheese melts.

Makes 6 servings.
