Simple, Ono, and Healthy Chicken Adobo
Try this delicious recipe from the Electric Kitchen!
- 2 lb boneless, skinless chicken breasts, cut into 2 inch pieces
- 1 onion, chopped
- 1/2 tablespoon whole black peppercorns
- 1 cup water
- 1/2 cup saltless soy sauce (available at Japanese grocery stores)
- 1/2 cup cider vinegar
- 2 bay leaves
- 7 cloves garlic, chopped
Directions:
- In a large sauce pot, combine all ingredients.
- Bring to a boil; lower to medium heat and simmer until liquid is almost completely evaporated.
- Do not stir while simmering to prevent chicken pieces from falling apart.
- Serve with brown rice.
Makes 6 servings.

This is the most perfect recipe for chicken adobo. Most authentic and best tasting adobo I have ever found. I shared it with my friends and family and they loved it too!
