Shoyu Fried Chicken Wings

Ingredients:

Shoyu Fried Chicken Wings

  • Oil for frying
  • 4 pounds chicken wings, disjointed and tips discarded
  • 2 teaspoons salt
  • 1 cup flour
  • 1/3 cup sugar
  • 1/2 cup low-sodium shoyu
  • 1 teaspoon mirin (rice wine)
  • 1/2 cup chopped green onions
  • 1/4 teaspoon grated ginger
  • 1 clove garlic, grated
  • 1 Hawaiian red pepper, cut in half

Directions:

  1. In a deep fryer or deep pot, heat oil to 400 degrees.
  2. Rub chicken with salt.
  3. Dredge in flour.
  4. In a medium bowl, combine sugar, shoyu, mirin, green onions, ginger, garlic and pepper.
  5. Fry chicken until golden brown.
  6. Immediately dip into shoyu mixture.
  7. Remove and drain.

Makes 6 servings.
