Portuguese Piri-Piri Sauce

Ingredients:

Portuguese Piri-Piri Sauce

  • 1 1/4 cups olive oil
  • 8 Hawaiian chili peppers, tops cut off
  • 1 bay leaf
  • 1 small piece of lemon rind

Directions:

  1. Pour oil into a clean, dry, screw-top glass jar; add remaining ingredients.
  2. Cover jar tightly and shake well.
  3. Store in the refrigerator, allow flavors to blend for at least 24 hours before using.
  4. This flavored oil can be used on pasta, broiled meats and fish, or as a flavor "spike" for salads, soups, and stir fries.

Makes 1 1/4 cups.
