Pork Cooked in a Clay Pot

Ingredients:

Pork Cooked in a Clay Pot

  • 1 lb pork loin or pork but, cut into 1 to 2-inch strips
  • Salt
  • Water
  • 1 tablespoon vegetable oil
  • 4 cloves garlic, crushed
  • 6 medium shallots or red pearl onion, sliced
  • 4 to 5 tablespoons fish sauce
  • 4 teaspoons sugar
  • 1 teaspoon black soy sauce
  • 1 tablespoon black pepper
  • Green onions for garnish
  • Black pepper for garnish

Directions:

  1. Put pork in a bowl; sprinkle with a little salt; cover with water.
  2. Let stand for about 2 minutes; rinse and drain.
  3. Place pork in a saucepot, cover with water and bring to a boil; drain.
  4. In a clay pot*, heat oil; sauté garlic and shallots until golden brown.
  5. Add fish sauce, sugar, black soy sauce, pepper, and pork.
  6. Bring to a boil; lower heat and cook until pork is done.
  7. Serve in the clay pot and garnish with green onions and a sprinkle of pepper.
  8. Serve with steamed head cabbage or a green salad.

Makes 2 servings.

*Note - use only clay pots that are safe for range-top cooking or use a regular saucepot.
