Pineapple Haupia

Ingredients:

Pineapple Haupia

  • 1 can (8 1/4 ounces) crushed pineapple
  • 3 tablespoons cornstarch
  • 3 tablespoons sugar
  • Dash of salt
  • 2 cups coconut milk

Directions:

  1. Drain pineapple well.
  2. Combine cornstarch, sugar, and salt; stir in 1/2 cup of the coconut milk until a smooth paste forms.
  3. In a saucepan, heat remaining milk on low heat.
  4. Stir in cornstarch mixture.
  5. Cook, stirring constantly, until mixture thickens.
  6. Stir in pineapple.
  7. Pour into shallow 8-inch square pan.
  8. Let cool until firm.

Makes 6 servings.
