Pinacbet (Mixed Vegetable Dish)

Pinacbet (Mixed Vegetable Dish)

  • 4 long eggplants
  • 2 long bitter melons
  • 1/4 lb sweet peppers
  • 1/4 lb fresh or frozen okra
  • 1/4 lb long beans
  • 3 cups water
  • 1/4 cup patis (fish sauce)
  • 3-inch piece ginger root, crushed
  • 1 cup fresh or frozen lima beans
  • 2 medium tomatoes, chopped
  • Salt to taste


  1. Make lengthwise slit in eggplants and bitter melons, cut in 3-inch pieces.
  2. Remove seeds from bitter melons.
  3. Slit peppers.
  4. Cut off and discard okra stems.
  5. Cut long beans in 3-inch lengths.
  6. In a large sauce pot, bring the water to a boil.
  7. Add patis, ginger, lima beans, and tomatoes; cover and cook on medium-high for 10 minutes.
  8. Add the eggplants, bitter melons, sweet peppers, okra, and long beans.
  9. Cover and cook for 15 more minutes, or until vegetables are tender, occasionally tossing vegetables in pot.
  10. Add salt if needed.

Makes 6 servings.
