Mini Popovers

Ingredients:

Mini Popovers

  • 1 cup milk
  • 2 eggs
  • 1 cup flour
  • 1/4 teaspoon salt

Directions:

  1. Using 3 muffin pans with 1 3/4-inch cups, grease only 6 cups in each pan (grease only every other cup).
  2. Place pans in oven and preheat oven to 425°F.
  3. Put all ingredients into blender.
  4. Cover and blend at high speed for 15 seconds.
  5. Pour batter into the greased cups.
  6. Bake for 20 to 25 minutes or until golden brown.

Makes 18 miniature popovers.

40 calories, 1 g fat, 0 g saturated fat, 25 mg cholesterol, 45 mg sodium, 6 g carbohydrate, 0 fiber, 1 g sugar, 2 g protein

60 calories, 1.5 g fat, 0.5 g saturated fat, 40 mg cholesterol, 65 mg sodium, 9 g carbohydrate, 0 fiber, 1 g sugar, 3 g protein
