Menehune (Butter) Mochi

Ingredients:

Menehune (Butter) Mochi

  • 1 pound mochiko (rice flour)
  • 2 1/2 cups sugar
  • 2 teaspoons baking powder
  • 1/2 cup butter, melted
  • 3 cups milk
  • 5 eggs, beaten
  • 1 teaspoon vanilla

Directions:

  1. Preheat oven to 350°F.
  2. In a large bowl, combine mochiko, sugar and baking powder.
  3. Combine butter and remaining ingredients; stir into mochiko mixture.
  4. Mix well.
  5. Pour into a 13 x 9 x 2-inch pan.
  6. Bake for 1 hour; cool.

Makes 48 servings.
