Mango Bars

Ingredients:

Mango Bars

  • 2 1/4 cups flour
  • 1 3/4 cups sugar
  • 1 2/3 cups butter
  • 4 cups chopped mangoes
  • 1/3 cup water
  • 1 teaspoon lemon juice
  • 3 tablespoons cornstarch
  • 3 tablespoons water
  • 2 cups quick oats

Directions:

  1. Preheat oven to 350°F.
  2. In a mixing bowl, combine 2 cups of the flour with 1/2 cup of the sugar.
  3. Cut in 1 cup of the butter.
  4. Press into a 13 x 9 x 2-inch pan.
  5. Bake for 7 to 10 minutes or until lightly browned.
  6. In a saucepan, combine mangoes, 3/4 cup of the sugar, the 1/3 cup water and lemon juice.
  7. Cook for about 10 minutes or until mangoes are tender.
  8. Combine cornstarch and the 3 tablespoons water.
  9. Stir into mango mixture and cook until thickened.
  10. Cool slightly.
  11. Pour over prepared crust.
  12. Combine oats, the remaining 1/4 cup flour and 1/2 cup sugar.
  13. Cut in remaining 2/3 cup butter.
  14. Sprinkle over mango mixture.
  15. Bake for 50 minutes.
  16. Cool and cut into bars.

Makes 4 dozen bars.
