Mandarin Orange Salad with Candied Walnuts

Ingredients:

Mandarin Orange Salad with Candied Walnuts

  • 1 cup walnuts
  • 1/4 cup sugar
  • 1 tablespoon butter
  • 2 heads Romaine lettuce, torn into bite-size pieces
  • 1 (11-ounce) can Mandarin oranges, drained

Dressing:

  • 1/4 cup white vinegar or Japanese rice vinegar
  • 1 cup vegetable oil
  • 1/2 cup small red onion, chopped
  • 2 tablespoons water
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 1 teaspoon dry mustard

Directions:

  1. In a medium non-stick skillet over medium heat, add walnuts, sugar and butter.
  2. Heat for 5 minutes, stirring frequently so mixture doesn't burn.
  3. Remove from heat and cool.
  4. In a large salad bowl, place lettuce, walnuts, and Mandarin oranges.
  5. In a medium bowl, mix dressing ingredients until well blended.
  6. Toss salad with dressing just before serving.

Serves 8.
