Mamma Rappa's Homemade Sauce

Ingredients:

Mamma Rappa's Homemade Sauce

  • 14 to 15 Roma (plum) tomatoes, quartered
  • 1/4 cup vegetable oil
  • 4 cloves garlic, minced
  • 1/2 medium onion, minced
  • 2 bell peppers (optional), chopped
  • 1 lb ground beef (optional)
  • 1/3 cup dried oregano leaves
  • 1/3 cup dried sweet basil leaves
  • 1/3 cup dried parsley flakes
  • 1 tablespoon salt
  • 1 tablespoon dried tarragon leaves
  • 1 teaspoon pepper
  • 1 teaspoon sugar
  • 1 (6 oz) can tomato paste (optional)

Directions:

  1. Put tomatoes into a blender; cover and puree tomatoes.
  2. In a large sauce pot, heat oil over low heat.
  3. Sauté garlic, onion, and bell pepper until lightly browned.
  4. In a skillet, brown ground beef; add to onions and garlic.
  5. Add pureed tomatoes, spices and seasonings; simmer for one hour, stirring occasionally.
  6. Add tomato paste to thicken the sauce if necessary.

Makes 2 to 2 1/2 quarts of sauce.
