Love Potion #9 Grilled Oysters

Ingredients:

Love Potion #9 Grilled Oysters

  • 6 tablespoons olive oil
  • 2 tablespoons Maui onion, finely chopped
  • 2 cloves garlic, minced
  • 1/3 cup grapefruit segments, divided
  • 2 tablespoons bell pepper, finely chopped
  • 1 serrano chili, seeded and minced
  • 1 tablespoon local honey
  • 3 basil leaves julienned
  • 1 teaspoon mint, finely chopped
  • 1/4 teaspoon sea salt
  • 8 fresh oysters, in shell

Directions:

  1. In a saute pan on medium, heat oil and add onion and garlic.
  2. Cook for 3 minutes or until onions are translucent.
  3. Add half of grapefruit, bell pepper and serrano chili; cook for 30 seconds.
  4. Remove from heat; stir in honey, herbs, and salt.
  5. Set aside.
  6. Grill oysters, flat-side up, over medium-high heat 4-6 minutes or until oysters begin to open.
  7. (Discard any oysters that do not open.)
  8. Remove oysters from grill and remove top shell.
  9. With a paring knife, loosen oysters from the shell.
  10. Top each oyster with relish and remaining grapefruit segments.
  11. Serve immediately.
