Lemon Barbecued Chicken

Ingredients:

Lemon Barbecued Chicken

  • 2 broiler-fryer chickens, 1 1/2 to 2 1/2 lbs each
  • 5 cloves garlic
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil
  • 1/2 cup lemon juice
  • 2 tablespoons chopped onions
  • 1/2 teaspoon pepper
  • 1/2 teaspoon thyme

Directions:

  1. Have chickens split into halves lengthwise with backbones, neck, and breast bones removed.
  2. Crush garlic with salt; stir in remaining ingredients.
  3. Place chicken skin side down in broiler pan and brush with sauce.
  4. Broil 6 to 8 inches from unit about 20 to 25 minutes or until chicken is browned, basting occasionally with sauce.
  5. Turn, brush with sauce, and continue broiling and basting for 15 to 20 minutes more or until done.

Makes 4 servings.
