Island Surprise Fish Saute

  • 3 tablespoons olive or avocado oil
  • 1 small Maui or Ewa sweet onion
  • 2 ripe mango and/or papaya, diced
  • 2 teaspoons brown sugar
  • 2 pounds fresh local fish filets of choice (firm white fish)
  • 1 tablespoon fresh chopped Chinese parsley
  • Garlic salt to taste
  • 2 tablespoons chopped macadamia nuts
  • Shredded coconut as garnish (optional)


  1. In a large skillet, heat oil, add onion, mango and/or papaya, and sugar over medium heat.
  2. Saute for about 3-5 minutes to reduce moisture in trimmings.
  3. Add fish and saute, covering fish in trimmings.
  4. Add Chinese parsley.
  5. Continue to cook for 3-5 minutes or until fish is light brown and fully cooked.
  6. Do not overcook.
  7. Trimmings should be reduced and starting to caramelize.
  8. Season with garlic salt to taste.
  9. Remove from heat and keep warm.
  10. Serve hot with rice and top fish with trimmings, macadamia nuts, and optional shredded coconut.
