Holly Jolly Caramel Popcorn

Ingredients:

Holly Jolly Caramel Popcorn

  • Non-stick cooking spray
  • 7 quarts plain popped popcorn
  • 2 cups dry roasted peanuts
  • 1 cup butter
  • 2 cups brown sugar
  • 1/2 cup light corn syrup
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla
  • Red and green food coloring

Directions:

  1. Heat oven to 250°F.
  2. Coat 2 shallow baking pans with non-stick cooking spray.
  3. Mix popcorn and peanuts together in shallow baking pans.
  4. Divide popcorn mixture evenly among the two pans.
  5. Set aside.
  6. In a medium pot, melt together butter, brown sugar, corn syrup and salt.
  7. Bring to a boil, stirring continuously with a wooden spoon.
  8. Continue to boil and stir over low heat for 5 minutes.
  9. Remove from heat and stir in baking soda and vanilla.
  10. Divide caramel between two medium bowls, add red food coloring to one, green food coloring to the other until you reach desired shades.
  11. Working very fast, pour one bowl of caramel over one pan of popcorn.
  12. Toss to coat.
  13. Repeat with the other bowl of caramel and pan of popcorn.
  14. Place pans in oven and bake for 45 minutes, rotating pans and stirring each pan with a non-stick spatula every 15 minutes.
  15. Allow to cool completely, then store in airtight containers.
