Guinataan (Coconut Milk-Fruit & Vegetable Pudding)

Ingredients:

Guinataan (Coconut Milk-Fruit & Vegetable Pudding)

  • 1/2 cup mochiko (glutinous or sweet rice flour)
  • 3 to 4 tablespoons water
  • 1 can (13.5 oz) coconut milk
  • 3/4 cup sugar
  • 1 quart water
  • 1/2 lb yellow or purple sweet potatoes, cooked, peeled, and cut into 1/2-inch cubes
  • 1/2 lb taro, cooked, peeled, and cut into 1/2-inch cubes
  • 1 cooking banana, peeled and cut into 1/2-inch slices
  • 1/2 cup pearl tapioca

Directions:

  1. Combine mochiko and the 3 to 4 tablespoons water; mix well to make a stiff dough.
  2. Form dough into 3/4-inch balls; set aside.
  3. In a large saucepot, add coconut milk, sugar, and the 1 quart water.
  4. Stirring constantly, cook over medium heat for 10 minutes.
  5. Add mochi balls and remaining ingredients.
  6. Stirring occasionally, cook for 15 more minutes or until mochi balls and tapioca are done.

Makes 10 servings.
