Glazed Orange Cake

Glazed Orange Cake

  • 1 pkg (18.5 oz) yellow cake mix
  • 1 pkg (3 oz) orange gelatin
  • 1 teaspoon orange rind
  • 1/2 teaspoon orange extract
  • 3 eggs
  • 1 1/4 cups milk
  • 1/4 cup salad oil
  • Vegetable oil spray
  • 1/2 cup orange marmalade
  • 3 tablespoons butter
  • or margarine, softened
  • 1/4 cup grated coconut
  • 1/4 cup sliced almonds


  1. Preheat electric oven to 350°F.
  2. In a large bowl of electric mixer, combine cake mix, gelatin, orange rind, orange extract, eggs, milk, and oil.
  3. Beat at low speed for 30 seconds, then at high speed for 2 minutes.
  4. Spray bundt pan with vegetable spray.
  5. Pour batter into prepared pan.
  6. Bake for 35 to 45 minutes.
  7. Cool in pan for 10 minutes; invert onto serving plate.
  8. Combine marmalade and butter; mix well.
  9. Brush over warm cake; sprinkle with coconut and almonds.

Makes 12 servings.

Delicious cake... I've been using this recipe for years, always with compliments. Only change I've made is using a lemon cake mix instead of the yellow cake. Gives it a bit more citrus zip.
