Fruit Quesadillas
- 1 cup coarsely chopped assorted fresh fruit (strawberries, bananas, peaches, apricots, papaya, pineapple, or mangoes)
- 1 to 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 4 6-inch flour tortillas

In a small bowl, combine fruit and sugar. Sprinkle with cinnamon. Spread about 1/4 cup of the fruit mixture in the center of each tortilla; carefully fold in half. Heat a small skillet; grill quesadillas for about 1 minute or until lightly browned on both sides. Makes 4 servings.
