Fruit Quesadillas

Fruit Quesadillas

  • 1 cup coarsely chopped assorted fresh fruit (strawberries, bananas, peaches, apricots, papaya, pineapple, or mangoes)
  • 1 to 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 4 6-inch flour tortillas


  1. In a small bowl, combine fruit and sugar.
  2. Sprinkle with cinnamon.
  3. Spread about 1/4 cup of the fruit mixture in the center of each tortilla; carefully fold in half.
  4. Heat a small skillet; grill quesadillas for about 1 minute or until lightly browned on both sides.

Makes 4 servings.
