Fresh Blueberry Sauce

  • 1 pound blueberries, rinsed and drained
  • 1/3 cup sugar
  • 1 1/2 teaspoons fresh lemon juice
  • Pinch of salt

In a medium saucepan, mix the blueberries with the sugar. Cook over medium heat until the blueberries begin to burst, about 5 minutes. Remove from heat. Transfer 1/2 cup of the blueberries to a blender and puree; scrape the puree with a spatula back into the sauce. Stir in the lemon juice and salt. Serve over vanilla ice cream or pound cake. Makes 2 1/4 cups.
