Fish Soup (Sopa De Peixe)

  • 1 1/2 to 2 lb fish pieces or 1 fish head*
  • 4 cups water
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 stalks parsley, chopped
  • 4 slices fried or toasted bread


In a sauce pot, cook fish for 10 minutes in the 4 cups water. Remove fish and flake; strain and reserve fish stock. In a skillet, heat oil. Sauté onion and garlic. Add fish, parsley, and fish stock; cover and cook for about 10 minutes. Serve over fried or toasted bread. Makes 4 to 6 servings. *Remove and discard bones.
