Eggnog Mini Loaves

Ingredients:

Eggnog Mini Loaves

  • 2 1/4 cups flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 eggs
  • 1 cup eggnog
  • 3/4 cup sugar
  • 1/2 cup butter, melted
  • 2 teaspoons vanilla
  • 2 teaspoons artificial rum extract

Directions:

  1. Preheat oven to 350°F.
  2. Coat three 5 3/4 x 3 x 2-inch loaf pans with non-stick cooking spray.
  3. In a large bowl, combine flour, baking powder, salt, cinnamon and nutmeg.
  4. In another bowl, beat eggs, eggnog, sugar, butter, and extracts; stir into dry ingredients just until moistened.
  5. Pour into loaf pans.
  6. Bake 30-35 minutes or until a toothpick inserted near the center comes out clean.
  7. Cool for 10 minutes before removing from pans to wire racks.

Yield: 3 loaves.
