Curried Pumpkin Peanut Bisque

Ingredients:

Curried Pumpkin Peanut Bisque

  • 1 1/2 cups chopped, peeled apple
  • 1 cup chopped onion
  • 1/4 cup apple juice
  • 1 1/2 teaspoons curry powder
  • 1 (15-ounce) can pumpkin
  • 1 (15-ounce) low-sodium chicken broth
  • 1/4 cup creamy peanut butter
  • 3/4 cup evaporated milk
  • Salt to taste
  • Garnishes (optional): chopped peanuts, chopped red-skinned apple, fresh cilantro, chili pepper flakes

Directions:

  1. In a large saucepan combine apple, onion and apple juice over medium-high heat.
  2. Stir occasionally, until onion is soft and most of apple juice evaporates, about 8 minutes.
  3. Add curry powder and stir until fragrant, about 30 seconds.
  4. Stir in pumpkin, broth and peanut butter.
  5. Cover, bring to a boil, reduce heat and simmer gently for 10 minutes.
  6. Stir in milk.
  7. Cool.
  8. Blend in blender or food processor until smooth.
  9. Garnish as desired.

Makes 4 servings.
