Cucumbers with Sesame Seed Miso Dressing

2 medium Japanese cucumbers
2 tablespoons finely ground sesame seed
1 tablespoon miso (Japanese fermented soybean paste)
1 tablespoon sugar
1 tablespoon Japanese rice vinegar
1 tablespoon water
Cut cucumbers in lengthwise halves. Cut diagonally into 1/8-inch slices, leaving the slices intact by not cutting through the cucumbers. Turn cucumber halves and cut 1 inch pieces at right angles. Lightly salt cucumber pieces and let stand for 10 minutes. Combine remaining ingredients, add to cucumbers, and toss lightly with mix. Chill. Makes 6 servings.
