  • 2 eggs
  • 2 tablespoons milk
  • 1 cup panko crumbs
  • 1/2 cup grated Romano cheese
  • 1 teaspoon ground black pepper
  • 2 1/2 cups prepared stuffing
  • 2 ounces fresh goat cheese, or favorite soft cheese cut into 14 cubes

  1. Combine flour, poultry seasoning, salt and black pepper to taste in a shallow bowl.
  2. Beat eggs and milk together in a separate shallow bowl until smooth.
  3. Mix panko, Romano cheese, and 1 teaspoon black pepper together in another shallow bowl.
  4. Scoop stuffing and roll into 14 balls, about 2 tablespoons each.
  5. Using your index finger make an indention in the center of ball.
  6. Insert a cheese cube, and pinch together stuffing to seal.
  7. Repeat with remaining balls.
  8. Dredge each ball through flour mixture, followed by egg mixture, and finish with panko mixture making sure it is evenly coated.
  9. Set aside and let sit to allow breading to set.
  10. Heat oil in a deep-fryer or large saucepan to 350°F.
  11. Carefully place 4 to 5 stuffing balls into hot oil and fry until golden brown on all sides, about 4 minutes; transfer to a paper towel-lined plate using a slotted spoon.
  12. Repeat with the remaining stuffing balls.

Makes about 14 balls.
