Crepes De Sir Thomas

  • 2/3 cup self rising flour
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup water

Sift flour into a medium bowl, make a "well" in the center of the sifted flour. In a separate bowl, whisk eggs, milk, and water. Gradually add mixture to flour; stir until the batter is well mixed and free of lumps. Heat a 8-inch or 10-inch non-stick pan over medium heat, lightly grease pan. Pour 2 to 3 tablespoons of batter into pan and swirl batter evenly over base of pan. Cook over medium heat for 1 minute or until golden brown on underside. Turn crepe over and cook until golden. Transfer to plate. Repeat with remaining batter to make a total of about 8 crepes. Serve with whipped cream or tempered chocolate. Makes 8 servings.
