Cornflake Chicken Tenders

Ingredients:

Cornflake Chicken Tenders

  • Non-stick cooking spray
  • 1/3 cup plain Greek yogurt
  • 1 tablespoon lemon pepper seasoning
  • 1 1/4 pound chicken tenders
  • 2 cups finely crushed cornflakes
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons olive oil

Directions:

  1. Heat oven to 450°F.
  2. Coat a wire rack with non-stick cooking spray and set in baking sheet.
  3. In a medium bowl, stir together Greek yogurt and lemon pepper seasoning.
  4. Toss in chicken tenders until coated.
  5. In a small bowl stir together crushed cornflakes, Parmesan, and olive oil.
  6. Coat each tender in crumb mixture and place on a wire rack. Bake until cooked through, 12 -15 minutes.

Serves 4.
