Chicken Cacciatore

Ingredients:

Chicken Cacciatore

  • 5 pounds boneless skinless chicken pieces (use thighs and breasts)
  • 1/4 cup vegetable oil
  • 1 cup minced onions
  • 3/4 cup minced green pepper
  • 4 cloves garlic, minced
  • 1 can (1 pound, 13 ounces) tomatoes
  • 1 can (8 ounces) tomato sauce
  • 1/2 cup Chianti wine
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon ground allspice
  • 2 bay leaves
  • 1/2 teaspoon thyme
  • Dash of ground red pepper

Directions:

  1. In a large skillet, brown chicken.
  2. Add onions, green peppers, and garlic; brown lightly.
  3. Add remaining ingredients and simmer uncovered for 30 to 40 minutes, or until chicken is tender.

To cook the chicken in a crock pot or a slow cooker:

  1. Place the browned chicken, onions, green peppers and garlic into the crock pot; add remaining ingredients.
  2. Cook on low for about 8 hours or on high for 4 hours.

Makes 10 servings.
