Checkah Bomb (Spicy Tuna-Cucumber Sushi)

Ingredients:

Checkah Bomb (Spicy Tuna-Cucumber Sushi)

  • 1 lb fresh ahi (yellowfin tuna) or aku
  • (skipjack tuna) fillet, chopped
  • 1/4 cup mayonnaise
  • 1/2 teaspoon Japanese 5 chili pepper powder
  • 1 teaspoon masago (capelin fish roe)
  • 2 tablespoons sriracha (hot red chili sauce)
  • 1/2 sheet sushi nori (seaweed) 
  • 1 cup Sushi Rice
  • 1 strip Japanese cucumber

Directions:

  1. Combine tuna, mayonnaise, 1/4 teaspoon of the chili pepper, masago, and sriracha.
  2. Spread rice on nori; sprinkle with remaining chili pepper.
  3. Place plastic wrap and bamboo mat on rice.
  4. Flip over so nori is face up and spread with 2 1/2 tablespoons tuna mixture.
  5. Place a cucumber strip on tuna mixture.
  6. Roll like a jellyroll, encasing tuna and cucumber.
  7. Shape by squeezing gently.
  8. Cut into 8 crosswise slices.

Makes 1 roll.
