Champorado (Chocolate-Mochi Rice Pudding)

Champorado (Chocolate-Mochi Rice Pudding)

  • 1 cup mochi rice
  • 1 can (13.5 oz) coconut milk
  • Water
  • 2 tablespoons ground cocoa
  • 1 cup sugar
  • Dash of salt
  • 1 cup light cream


Wash and drain rice. Add water to the coconut milk to make 3 cups. In a medium saucepan, combine rice and coconut milk mixture. Bring to a boil; lower heat and cook for 10 minutes, stirring frequently to prevent scorching. Combine cocoa, sugar, and salt; add to rice mixture. Continue cooking until rice is cooked, stirring frequently. Just before serving, stir in light cream. Serve hot or cold. Makes 6 servings.
