Breadfruit and Cracklings Salad

Breadfruit and Cracklings Salad

  • 1 small green breadfruit
  • 3 cups shredded head lettuce or cabbage
  • 1 Maui onion, sliced
  • 1 tomato, chopped
  • 1/4 cup white wine vinegar
  • 1/4 cup soy sauce
  • 1/4 teaspoon pepper
  • 1 teaspoon dried chili flakes
  • Lettuce leaves
  • Tomato slices
  • 1/2 lb cracklings (fried pork rinds), coarsely crushed
  • 1 bunch cilantro (Chinese parsley), chopped


  1. Peel breadfruit.
  2. Cut into quarters and cook in salted water until fork tender; thinly slice breadfruit.
  3. In a large bowl, combine breadfruit, lettuce, onion, tomato, vinegar, soy sauce, pepper, and chili flakes.
  4. Tossing occasionally, marinate for 15 minutes.
  5. Place lettuce on serving platter; add breadfruit mixture.
  6. Top with tomatoes, fried pork rinds, and Chinese parsley.

Makes 6 to 8 servings.
