Black Bean and Rice Salad

Black Bean and Rice Salad

  • 1 cup long grain rice
  • 1 cup chicken broth
  • 1 can (14 oz) black beans, drained and rinsed
  • 1 cup chopped celery
  • 1 cup chopped red bell pepper
  • 1 cup chopped green onions
  • 1/3 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon sugar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried tarragon
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper


In a rice cooker, wash and drain rice. Add chicken broth and cook rice. Add black beans, celery, bell pepper, and green onions to warm rice. Combine the remaining ingredients; stir into rice mixture. Makes 4 servings.
