Black Bean and Rice Salad

Ingredients:

Black Bean and Rice Salad

  • 1 cup long grain rice
  • 1 cup chicken broth
  • 1 can (14 oz) black beans, drained and rinsed
  • 1 cup chopped celery
  • 1 cup chopped red bell pepper
  • 1 cup chopped green onions
  • 1/3 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon sugar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried tarragon
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Directions:

  1. In a rice cooker, wash and drain rice.
  2. Add chicken broth and cook rice.
  3. Add black beans, celery, bell pepper, and green onions to warm rice.
  4. Combine the remaining ingredients; stir into rice mixture.

Makes 4 servings.
