Apricot Delight

Ingredients:

Apricot Delight

  • 2 cans (15 oz size) apricot halves, including liquid
  • 1 1/2 cups crushed butter crackers
  • 2 to 4 tablespoons margarine or butter
  • Vanilla ice cream, optional

Directions:

  1. Preheat electric oven to 350°F.
  2. Place apricots, including liquid, in small baking dish.
  3. Sprinkle with cracker crumbs, pressing crumbs lightly into liquid.
  4. Dot with margarine.
  5. Bake for 30 minutes or until bubbly and light brown.
  6. Serve with vanilla ice cream, if desired.

Makes 4 servings.
