Ingredients:
Almond Float with Fresh Fruits
Try this delicious recipe from the Electric Kitchen!
- 2 tablespoons unflavored gelatin
- 1 1/4 cups water, divided
- 3/4 cup sugar
- 1 cup unsweetened almond milk or soy milk
- 1 tablespoon almond extract
- 1 (15 ounce) can Mandarin oranges with juice
- 1 cup peeled and seeded fresh lychees or 1 (15 ounce) canned lychees, drained
- Fresh cut assorted fruits like mango, watermelon, melons, kiwi, strawberries, blueberries, raspberries, grapes
Directions:
- Soften gelatin in 1/4 cup of the water.
- In a saucepan, bring remaining 1 cup water to a boil.
- Add softened gelatin and stir until gelatin is dissolved.
- Stir in sugar, milk, and almond extract.
- Pour into an 8-inch square pan and chill until firm.
- Cut almond gelatin into square or diamond shapes.
- To serve, place Mandarin oranges with juice and lychees in a serving bowl; add fresh fruits and almond gelatin.
Makes 8 servings.

Turned out good. I like that it was non-dairy/vegetarian. Probably will make with coconut milk next time instead of soy and see how that goes.
