Achiote Oil

Ingredients:

1 cup achiote seeds (seed from the lipstick plant; also known as annatto or achuete)
2 cups vegetable oil

Directions:

In a saucepan, combine seeds and oil. Cook over low heat for 5 minutes or until oil is a rich red color; strain and discard seeds. Store oil in a covered glass container in the refrigerator. Makes 2 cups.

120 calories, 14 g fat, 1 g saturated fat, 0 mg cholesterol, 0 mg sodium, 0 g carbohydrate, 0 g fiber, 0 g sugar, 0 g protein
