Do-Si-Dos Peanut Thai Chicken

Ingredients:

Do-Si-Dos Peanut Thai Chicken

  • 2 pounds boneless, skinless chicken tenderloins, cut into 1-inch pieces
  • 1/2 cup bottled teriyaki glaze
  • Non-stick cooking spray
  • Wood skewers
  • 1 (14-ounce) box of pad Thai noodles, prepared according to box
  • 8 crushed Do-si-dos Girl Scout Cookies
  • 1/4 cup prepared Thai peanut sauce

Directions:

  1. Place chicken in medium bowl.
  2. Pour teriyaki glaze on chicken.
  3. Cover bowl with plastic wrap and marinate in refrigerator for one hour.
  4. Spray grill rack with non-stick cooking spray and set heat to high.
  5. Thread 6 chicken pieces onto each skewer.
  6. Grill chicken for 8-10 minutes, turning skewers over halfway through.
  7. Remove skewers from grill.
  8. Place prepared pad Thai noodles on a plate, then chicken on top.
  9. Sprinkle half of crushed Do-si-dos cookies on chicken.
  10. Mix remaining Do-si-dos cookie crumbs with peanut sauce.
  11. Pour peanut sauce over chicken and noodles or serve as a side dipping sauce.

Serves 4.

Tip: Soak skewers in ice-cold water for 15 minutes to prevent them from burning.
