Cucumbers with Sesame Seed Miso Dressing

Ingredients:

Cucumbers with Sesame Seed Miso Dressing

  • 2 medium Japanese cucumbers
  • Salt
  • 2 tablespoons finely ground sesame seed
  • 1 tablespoon miso (Japanese fermented soybean paste)
  • 1 tablespoon sugar
  • 1 tablespoon Japanese rice vinegar
  • 1 tablespoon water

Directions:

  1. Cut cucumbers in lengthwise halves.
  2. Cut diagonally into 1/8-inch slices, leaving the slices intact by not cutting through the cucumbers.
  3. Turn cucumber halves and cut 1 inch pieces at right angles.
  4. Lightly salt cucumber pieces and let stand for 10 minutes.
  5. Combine remaining ingredients, add to cucumbers, and toss lightly with mix.
  6. Chill.

Makes 6 servings.
