Cucumber Feta Salsa

Ingredients:

Cucumber Feta Salsa

  • 1 cup crumbled feta cheese
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon freshly ground pepper
  • 1 1/2 cup cubed and seeded cucumber
  • 1 cup finely chopped red onion
  • 3 tablespoons chopped fresh mint
  • 3 tablespoons chopped fresh dill

Directions:

  1. Combine feta cheese, lemon juice, and pepper; partially mashing the cheese with a fork.
  2. Add cucumber, onion, mint, and dill.
  3. Serve with pita chips.

Makes about 3 3/4 cups.
