Baked Island Fish

Ingredients:

BAKED ISLAND FISH

  • Non-stick cooking spray
  • 3 to 5 pound whole fish (such as opakapaka, mullet, kumu, papio)
  • 1½ teaspoons salt, divided
  • Dash of pepper
  • 1 tablespoon minced onion
  • 1 tablespoon minced parsley
  • 1 tablespoon bacon drippings
  • 1 cup small bread cubes
  • ¼ cup milk or low-sodium chicken stock
  • 3 slices bacon
  • Ti leaves

Directions:

  1. Heat oven 325°F.
  2. Coat a large baking pan with cooking spray.
  3. Clean fish; rub inside with 1 teaspoon of the salt.
  4. Combine remaining salt, pepper, onion, parsley, bacon drippings, bread cubes, and milk.
  5. Lightly stuff fish with bread mixture; secure with skewers.
  6. Arrange bacon slices over top of fish.
  7. Wrap fish in ti leaves.
  8. Place in prepared pan and bake for 20 minutes per pound.

Makes 2 to 8 servings.
