SPAM Goulash

Ingredients:

SPAM Goulash

  • 3 tablespoons vegetable oil
  • 4 medium potatoes, cubed
  • 1 small onion, minced
  • 4 cloves of garlic, minced
  • 1 can (6 ounces) tomato paste
  • 1 can (8 ounces) tomato sauce
  • 3 cups water
  • 2 cans (12 ounce size) SPAM, diced
  • 1 can (11 ounces) corn, drained
  • 1 package (16 ounce) frozen mixed vegetables
  • 1/2 teaspoon dried oregano leaves
  • 1/2 teaspoon dried basil leaves
  • Salt and pepper to taste
  • 4 to 5 tablespoons flour
  • 6 tablespoons water

Directions:

  1. In a large sauce pot, heat oil and sauté potatoes, onion, and garlic until potatoes are half-cooked.
  2. Add tomato paste, tomato sauce, the 3 cups of water, SPAM, corn, frozen vegetables, oregano, basil, salt, and pepper; bring to a boil.
  3. Reduce heat and simmer for about 20 minutes or until potatoes are tender.
  4. Mix flour with the 6 tablespoons water and slowly stir into goulash.
  5. Cook, stirring constantly, until mixture thickens.

Makes 6 servings.
